Peter Michael Winery specializes in only single-vineyard designated wines produced from premium hillside vineyards. Each wine reflects the unique characteristics of its "terroir" or site. The foundation of the wine is crafted under the guidance of Nicolas Morlet, winemaker, & Javier Avina, vineyard manager.

Traditional winemaking techniques such as French oak aging, a weekly “bâtonnage” or
stirring while in barrel and native fermentations are supplemented by new traditions.
As an example, to create the desired humidity found in underground caves, we installed a
misting system in our barrel aging room. We have also designed a hand sorting system to ensure
that only fully ripened, whole grape clusters make it into the wine press.
